Jersey is the name of a manufacturing process of fine fabric knitted in jersey stitch. The Jersey fabric is therefore a fabric of the knitwear family, it is knitted and not woven! 

Jersey: This name comes from the name of the island of Jersey, where the technique has been used since the Middle Ages. And yes! Originally, jersey was made of wool!
